• 1 Whole Organic Chicken (Patted Dry)
  • 2tsp salt
  • 1tsp lemon pepper
  • 1tsp garlic powder
  • 1tsp dried thyme
  • 8 pitted whole dates (chopped)
  • 10 Garlic cloves (chopped)
  • 1tbsp Fresh rosemary (chopped)
  • 2 whole lemons


  1. Preheat oven to 375-400 degrees.
  2. Place chicken in a roasting pan.
  3. Combine salt, lemon pepper, garlic powder and dried thyme.
  4. Rub seasonings over skin of the bird and into the cavity. Cover bird inside and out.
  5. In separate bowl, combine dates, garlic cloves, rosemary and lemons (all chopped.)
  6. Stuff dates, cloves, rosemary and lemons into cavity of bird.
  7. Place chicken dish into preheated oven.
  8. Bake 1hour 15mins. (Check bird after 1 hour)
